
AS the year winds down, I realise I have been blessed beyond measure. I remember when the year started out, I wrote on my facebook wall “to a year of great possibilities” and it indeed has been one. I have made a list of things that I have been constantly doing that are fun and meaningful to me.
1. Observing nature and the beauty around me and photographing it whenever I had a chance!
2. Making breadsticks a lot!
3. Playing covers of Hillsong music (though I didn’t record any!) and wishing I was right there in the action.
4. Texting, emailing and chatting with my international friends!
5. Checking off my list of to-do things for this blog. They have pushed my boundaries (some things I never thought I would do) and comfort zone and it felt good
6. Discussing real life issues with a church group and enjoying the fellowships and activities
7. Making new friends both on the internet and life!
8. Experimenting with juices. Having to mix different flavours and colours of natural fruit, fizzy sodas and processed juices has been fun. I kind of think I am a pro now (ha!)
9. Creating and designing content for this blog. Absolutely exciting!
10. Thinking and contemplating what the future has for me and discovering who I am
11. Hosting the LOL Series. I have met amazing and talented people who are passionate about what they do and have been inspired and I am sure you have too!

Papaya And Fried Plantain Salad
Basically when one thinks of salad, Â they envision green leafy veggies, fruits and all healthy non-oily food. So you may be thinking “Whats up with the fried plantain?” I also have no idea! But ever since I started RB, I have followed many food blogs which have inspired me to take things to the next level! It’s a crazy thought that came to me and then next thing I knew, I was making the salad because all the ingredients were available. Its an experiment that surprisingly came out right. Happy dance.
Ingredients
2 C Â shredded papaya(it has to be nearly ripe but still crispy)
1/2 C Julienned (crosswise) fried ripe plantain
1/2 Tbsp finely chopped parsley
1/2 Tbsp fresh lemon juice
A pinch of salt
Mix all ingredients together and let chill for an hour. Serve cold.
PS: Make sure that the fried plantain completely cools down before mixing with the rest of the ingredients.

Big News| Business Campaign
I  love when I have a direction of where I am going and this past month has been a whirlwind of random events but after it all, my mind is settled. Anyways, the big news is that:
I have been ranting a lot about starting a small business and the hardships of starting one(cause I have gone through it all, I think!) and now after much prayer, editing, reviewing business plans and ideas,  our(me and my sister) campaign has gone  live!
We are raising money to kick-start our photography business here and it would be a dream come true if all the funds are raised and operations started.
I am so excited and nervous all at the same time but being able to take this step and challenge in my life(had to battle with myself!) has taught me valuable lessons and I cant wait to see what will happen!
