Lemongrass Iced Tea

Lately, I have been challenging myself to drink more water because as glorious as the rainy season was, it is slowly coming to an end. Almost every morning now we wake up to blinding sunshine. I was looking for more creative ways to hydrate the body. A few months ago, I talked about lemon iced tea and had been toying with the idea of trying to make lemongrass iced tea. We have this (barely there) lemongrass bush that I almost destroyed while making these amazing potato wedges. Lemon grass tea is a real treat because aside from its health benefits it has a captivating flavor. Since I am making a mental list of different drinks for this hot weather, this lemongrass iced tea did not disappoint.

What you will need:

6C. Water

20-25 blades of lemongrass

Sugar

1 Lemon

Ice cubes

Method

In a clean saucepan, add water and lemongrass blades and bring to a boil. When the water changes color and start releasing a sweet scent, remove from fire. Let the tea cool completely. Once fully cooled, Add sugar and lemon juice. Keep refrigerated. When it is time to serve, add ice cubes in a glass, some fresh lemongrass blades for a visual aesthetic and pour in your tea.

It is so easy to make and a real cooling treat. Also, you can easily double or triple the recipe to make drinks for impressing guests and friends at a party. They will not know what hit them. Trust me.

Have a lovely week

Three Drinks To Make With Mangoes

As much as the rain is still upon us, the sun still shines almost every day. Some days can be mild and some days can be scorching. The good thing about weather like this is the blessings that come with it. The fresh produce (I’m sure I have mentioned it before), air and many more things that we take for granted. Fruits are in season. Especially the mangoes and it is a wonderful moment…almost bitter sweet. Being surrounded by all types and sizes of mangoes either from local markets, street vendors or mere mango trees. It brings out the beauty of fresh fruit.

The feeling of plucking(more of stoning really!) a fresh fruit from a tree and eating it as it is(after washing), juicing it or simply making something really good out of it is so satisfying. I hope you find this mango season a blessing…a satisfying blessing. There are a few drinks I have made on the blog here and I was thinking with all these abundant mangoes, why can’t we substitute them and get drinking or sipping. So here are three drinks to make with mangoes.

By simply substituting the fruit in the recipe for mangoes, you can have the goodness of mangoes. Hope you get juicing.

What other ways are you eating your mangoes? Also, what one thing do you love about this weather?

PS: Currently I am trying to make ice cream…or something like it. Will let you know soon.

Lemon Iced Tea

I remember the first time I had iced tea, I was sold. I vowed to make it one day. That was way back in primary school. Somehow the taste of that lemon-mint flavored bottled iced tea stuck in my memory till this tea was made this last Sunday. Tasting it, I realized it was so close to that tea I had tasted over six years ago. Nothing can beat that feeling of recreating something. So I am here to share with you this relatively easy iced tea recipe.

What you’ll need:

3 Litres water

5 Teabags

2 ½ Lemons

Ice cubes/ crushed ice

Sugar

Method

In a large sauce pan, add the water and the teabags and bring to a boil. When the tea has boiled, remove from fire and let it cool completely. Squeeze the lemons and sieve the juice. Add the lemon juice and sugar in the cooled down tea and stir thoroughly till the sugar is fully dissolved. Chill for 30 minutes in the refrigerator. Serve with lots of ice cubes and a lemon slice or wedge.

I know you are wondering why all that much tea but it goes in an instant, trust me. Especially now that the weather is scorching hot. The secret to making great iced tea is having a lot (A LOT) of ice cubes!I did not put any measurement for sugar since we all have different preferences when it comes to sweetness. For the record, almost a kilo went down while making this.

How  did you celebrate the women in your life?

Have a great week
