Amaranthus Salad

Last month I went for medical check up and the doctor told me that my cholesterol level was high! I know its surprising. I didn’t expect it cause I have always thought of myself as one who shunned the fats. Guess I was wrong. So I am embarking on a healthy journey(not so easy as it sounds) and I want to challenge myself with creating recipes that are savory and healthy. Thus this amaranths salad. Personally I liked loved it…so much that I just had to share it. Let me know your reaction after you try it. Here is how to prepare it.

  • 2 Cups fresh amaranthus leaves washed
  • 1/2 medium avocado chopped
  • 1/4 Cup grated carrot
  • 1/4 Cup grated(raw green) mango
  • 3 Tbsp pure honey
  • 3 Tbsp fresh lemon juice
  • A pinch of salt
  • 2 Tbsp roasted sesame seeds

In a large bowl, combine all the ingredients from top to bottom. Chill for 10 minutes and serve. NOTE: Use soft and tender leaves.

Stir-fry From Scratch

I love stir fries or rather frys(new word?!). I also love stir frys that are from scratch. Being able to whip up something amazing in just a few minutes from scratch is so awesome.Its double fun. I think. Anyway I wanted to share this recipe with you and I hope you enjoy. Remember you can substitute anything for anything.

What you will need:

1/2 C Eggplants cubed

1/4 C Carrots sliced

1/2 C French beans julienned

1/4C Mushrooms chopped

1/4 C Pineapples cubed

1/4C Chilli sauce

1 Tbsp Sesame seeds (roasted)

1/4C Tomatoes cubbed

1 Medium Onions diced

Salt

pepper

oil

In a frying pan, combine the first three ingredients with the oil. Cover and let cook for 3 minutes. Open and stir while adding salt, pepper and the next three ingredients. Cover and let cook for another 3 minutes. Lastly, add the sesame seeds, the tomatoes and the onions. Keep stirring for another three minutes. Remove from fire and let cool. Goes well with rice.

Note: The  consistency will be  half cooked crunchiness. If you want it to be more cooked, keep stirring  until your desired feel.

Lemon Cake Via Food Network

First of all I wanna say that this post was not scheduled for today(technical problems) but I hope you bear with me. Secondly I wanna say that this cake is awesome… I baked it two weeks ago  and decided to share it with you! Mouth watering… I know! So this is basically a lemon cake sans frosting The recipe can be found here.

One thing I am grateful for is the fact that my images are getting better and better… thanks to CAT Photography(owned my sister and I). Its uplifting to know that  from where I started, I am improving…but this post is not about how much progress I have. Its about this great cake and you should try it.
