Black Bean Stew

Beans are synonymous with Uganda, (among many other foods) in a good way that is. You wont spend a month (or less than that really) without indulging in bean stew or soup. Whats baffling though is the many kinds (types) of beans there are. My grandmother knows all names in the local dialect. Sometimes she would ask “what beans are these?” and I, not knowing what to say, would simply say “err…beans” and then she would insist what type they are and I would say I don’t know. She would then tell me the names and how they are grown and in what season and place they thrive best. As much as we identify with beans, they are cooked differently in every region and according to personal preferences. I have encountered the plain boiled, the stewed, the ones mixed with vegetables, the dry fried…the list goes on. I thought it would be great to share how we cook beans here. I can’t say it is a constant recipe because how the stew turns out will depend on whats available (picture a moment where you are ready to cook beans until you realize you have no tomatoes!! It has happened before).

Sweet Potato Chips (Fries)

This is what happens when you realize you have an overload of sweet potatoes and are tired of eating them the same way(read: Steamed. Always). Who would have thought sweet potatoes are this versatile, a ton of random ideas are running through my mind. This recipe is dedicated to all fellow super snackers(?!) I mean really, who doesn’t like snacking? But on a serious note though, isn’t  it amazing that you get to have a variety of foods you can make out of sweet potatoes? So go try this out  and let me know how it turned out. Be warned though, these chips are addictive. You will finish them in one seating. Trust me!

What you’ll need:

3 Small sweet potatoes

½ Tsp curry powder

½ Tbsp. royco mchuzi mix spicy beef flavor

1 Tbsp. cooking oil

½ Tsp salt

 Method

Peel the potatoes, wash and dry them. Using a sharp knife, cut the potatoes into thin strips with your desired length and width. In a bowl, add the potato strips, salt, mchuzi mix, curry powder and oil. Cover the bowl and shake gently until all the potatoes are fully coated with the mixture. Evenly distribute them on a cookie sheet or oven toaster sheet. Bake for 15 minutes or less or until they start to brown.  Remove from oven and let cool. Serve.

PS: I used an oven toaster.

PSS: Bake them more if you want a crunchy feel but regulate the fire so they don’t burn(story of my life).

 

 

 

Lemongrass Flavored Passion Fruit Juice

It dawned on me recently that way before strainers were introduced in the country, we (our ancestors, rather) still enjoyed passion fruit juice and even knew how to flavor it. Isn’t that amazing? It all happened when we had visitors and had to, well, be hospitable by offering juice and just at that moment electricity decided to leave, a common phenomenon. Anyway we (I) were frustrated and dear mother asked me to go ahead and cut the passion fruits in half, and then with fresh lemon grass, she did her magic and in less than 15 minutes, guest were happily sipping on juice! You guys, it is so aromatic you have to try it. Another great fact about this juice is that it will relax and calm you down.
